How to Make Dalgona Vietnamese Coffee Cupcakes

Dalgona coffee was a TikTok trend in 2020. I decided to see if using instant Vietnamese coffee would work the same as instant coffee, so I tried whipping it. Although it did not have the same fluff as instant coffee, it still tasted pretty interesting when it was used as an ingredient to make cupcakes. Dalgona Vietnamese Coffee Cupcakes Recipe

Ingredients

⚈ 1/8 cup granulated sugar
⚈ 1/4 cup brown sugar
⚈ 1/8 cup vegetable oil
⚈ 1 egg
⚈ 2 Tbs water
⚈ 1/2 cup almond flour (or 1/3 cup almond flour)
⚈ 1 tsp baking powder
⚈ 1/2 tsp baking soda
⚈ 1 tsp salt
⚈ 1/4 cup Vietnamese instant coffee mix (whipped together with 2 Tbs granulated sugar and 2 Tbs water)

Steps

  1. Bake at 350 F. for 16-17 minutes or until a toothpick comes out clean or bake for 10 minutes in a Babycakes cupcake maker.
  2. Let the cupcakes cool completely before decorating them.
