How to Make Ube Chiffon Cupcakes

Ube, also known as purple yam, is a root vegetable that is popular in Asian countries and in Hawaii. Ube is starchy, and it has a similar texture to sweet potato. To make cupcakes with ube in it, I cooked the ube and the mashed it. Then, I add the ube into the cupcake batter before baking it.

Ube Chiffon Cupcakes Recipe

Serving: ~12 cupcakes


  • 3 eggs, separated (whip the egg whites till stiff peak, add 1/8 cup of sugar when it is foamy)
  • 1/4 cup granulated sugar
  • 1/4 cup vegetable oil
  • 1/2 cup cooked ube
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 1/2 cup cake flour, sifted (if substituting AP flour, add 2 tsp cornstarch)


  1. Watch video for step by step instructions.
  2. Bake the cupcakes at 350 F. for 12-13 minutes (or until a toothpick comes out clean) OR use a Babycakes cupcake maker and bake for 9-10 minutes.
